Waves is our collection of expressive, process-led coffees — bold, funky, and full of movement. These are the lots we choose for their wild character, deep sweetness, and vibrant energy in the cup.

This lot comes from La Divisa farm in Circasia, Quindío, Colombia, where Sebastian Gomez grows Chiroso at 1,700–1,800 metres above sea level in volcanic ash soils. Ripe cherries are carefully selected, fermented aerobically for 45 hours, then naturally dried on raised beds for up to 12 days.
